Hi, I’m Chris Fong, the founder of Gilbert’s, and this journey started with a simple dehydrator and a lot of love. Growing up, my brother and I thought jerky was dry, tough, and flavorless—not exactly something to get excited about. That all changed when our dad decided to make his own. What he created wasn’t just good; it was life-changing—tender, flavorful, and nothing like we’d ever tasted. Inspired by his creativity, my brother and I dove into the craft, learning from him and embarking on our own jerky-making adventures.
After countless experiments and a year of perfecting recipes, I found the formula that felt just right. It all became real when my dad uttered those magic words..."This is the best jerky I've ever tasted." That’s when I knew this wasn’t just jerky—it was an experience worth sharing with the world.
